Some changes I made to the chickpea stew:
I used the chickpea broth from the can instead of using chicken stock. This way, you can make it vegetarian or vegan easily. If you also use vegan yogurt, you are all set to server this to your vegan friends. I used bagged spinach for simplicity, and I’m just not a fan of chard, which Alison uses.
