Peal the skin off of 5 small to medium potatoes

Slice them as shown in video and sit them in a bowl of water

Place a pot over medium heat… to the pot add 3 tbs of butter or margarine, add 1/2 chopped small onion, 3 tbs of flour, and stir until flour changes colors.

Add 3 cups of carnation or whole milk, 1 bay leaf, and season with salt, paprika and pepper

Add 1 1/2 cup of parmesan cheese and a lil cheddar cheese

Stir until melted

Remove bay leaf once cheese sauce is done

Poor some of the cheese sauce into a baking pan

Pat potatoes dry and add the first layer of potatoes to the baking pan.

Repeat process until no more potatoes and sauce remain

Top final layer of potatoes with a little shredded cheddar cheese and 1 tbs of parsley flakes

Cover with aluminum foil and back on 350 degrees for approximately 40 mins, then bake uncovered until cheese browns slightly
